    The Basket With Eggs

    We started preparing for Passover weeks in advance. Mother saved eggs, and the geese were fattened and slaughtered. Goose fat was prepared to be used with mashed potatoes, in soups, or spread on matzoh. The grieven, little pieces of browned fat that couldn't be preserved, were enjoyed right away on a piece of bread. Dozens of eggs were used for Passover meals. We even gobbled up plain hard-boiled eggs. We waited all year to eat matzoh balls and noodles made from eggs.
